Black Beans

Black beans are one of my favorite beans. I love the S&W Brand canned black beans because they taste great on their own and they're easy. So when I can get them on sale I snatch them up. I do have a bunch of dried black beans in my food storage. If anyone has a great recipe for those I'd love one. Also black beans are really easy to sneak into recipes--I add them to the burger in our tacos.

Anyway, so when I was single and had better eating habits I used to eat black beans for lunch quite a bit. I tried to pack my lunch full of protein because working at the vet clinic was really physical work and I needed some lasting energy. Well, one of my goals with this weightloss challenge is to reform my eating habits so I've started eating black beans for lunch again! Here's a simple recipe I use and add things to depending on what I have:

Black beans and tortillas:

1 can black beans
about a cup of your fav salsa
a couple shakes of some frozen corn
small handful of mozz cheese

I cook it on the stove top until it gets nice and bubbly and the cheese is all melty. Then I just eat it with a tortilla. If I have some leftover ham I'll add that in. I know kind of a silly little recipe but I like it and it's packed with protein and not much fat. Try it sometime!!!

ps Julie, I tried your cashew chicken and it was yummy! I think I might add some more veggies to it and maybe some mushrooms. Todd said I could add it to the rotation!!! Thanks!

I love black beans also, and I have to agree with you on S&W. I usually eat beans for lunch too and just add them to whatever I am having, even salad. I will have to try your concoction. Good to hear from you. I will have to post soon. It has not been the greatest week. I haven't felt too well and I have been really busy on top of that.

We can not have that in our house. Marci has enough problems as it is. I will not elaborate.

I tried it today on a whole wheat wrap and it was great!
